It’s no secret that I’ve been enamored with Chef Deb Paquette since I had my very first meal at Zola 13 years ago. In fact, when I started this blog in May of 2009, she was one of the first chefs I wrote about.
Her food has a style all its own, and it’s certainly never lacking in flavor or creativity. A few years ago she did an interview with Food Arts magazine, and I pulled this quote from her: “Eating out is like going on a journey for the day, going on a mini vacation. Give them that piece of somewhere else they’re not going to get somewhere else.”
Peruvian Quiche at Etc.
Yes! That’s exactly what I want when I dine out and that’s why I love her and her restaurants so much. I want something completely different than I’m going to do at home myself. Flavor combinations or techniques that leave me intrigued and amazed.
Zola closed and my heart was broken. But then Etch opened downtown with Deb at the helm and all was well in my world again. Then, a few months ago, my world got even better when Etc opened in my neighborhood.
Now I can eat at Etch when I’m downtown and I can have happy hours, dinners and BRUNCH in my own hood. Hooray!
Etc’s Fried Potato Salad
This past weekend a friend and I went to Etc for my first brunch experience there, and while I had high expectations, I wasn’t expecting to eat something that completely changed my mind about a dish I’ve abhorred my entire life. Potato salad. Never been a fan. At all.
But the fried potato salad was screaming “try me!” to my friend, and since I like to keep an open mind and try things at least once, I happily ordered it. It doesn’t hurt that I’ve honestly never had a dish in any of Deb Paquette’s restaurants that I didn’t like. Gotta have faith.
You guys. There aren’t even words. This fried potato salad blew my mind (and my friend’s too).
Shakshuka at Etc. brunch
tomato eggplant ragu, sunny egg, hummus, feta, lovage, za’tar spice, toasted sourdough
Everything we had was delicious – the trio of quiches, the Shakshuka, the dessert.
Being more of a savory person, it’s sometimes easy for me to forgo the sweet finish after my meal, but not here. Etc/Etch’s Pastry Chef Megan Williams is one of the very best in town, so even though we were completely stuffed, my friend and I decided we must order the pear crumble, even if we could only handle one or two bites.
Ha. We quickly realized that no matter how painful, we were finishing every last morsel of this delicious creation!
Pear Crumble Tart at Etc.
pecan streusel, honey vanilla ice cream, pear puree, black currant sauce
My only regret about brunch at Etc. is that we didn’t have a third person dining with us, as I really wanted to try to the “Southern Belly”, a tea braised pork belly with polenta, smoked sorghum, belle meade bourbon butter, and apple brussels sprouts slaw.
Ah well, guess I’ll be making a return visit very soon for that. And some potato salad.

Even after dozens and dozens of new restaurants have opened in Nashville over the past couple of years, Etch is still hanging out on my list of favorites. As I type this, I just realized they will be celebrating their 5 year birthday this year! How is that even possible???
Truly, it seems like only yesterday that they were opening and I was eating roasted cauliflower with smoked pea puree for the first time.
I’m sure everybody and their mother, brother, sister, dad, and grandparents all know that this cauliflower dish is a MUST when dining at Etch, but I’m just going to tell you one more time. You know, in case there might be a distant, long lost cousin out there who hasn’t heard.
Etch’s Argentinian Beef Tenderloin
salsa verde beef, fried potato salad, zucchini fresca, greens, roja chimichurri
As I mentioned previously, I feel very fortunate that I now have very easy access to both Deb Paquette restaurants –Etc in my neighborhood, and Etch downtown, where I work at least a couple of days a week.
If you’re local and you don’t work downtown, you may not have had the opportunity to dine at Etch for lunch, but for those that have offices down there, or for any of you that might be traveling to Nashville for a visit and are staying downtown, then it definitely needs to be on your lunch list.
This week’s discovery when perusing the lunch menu: fried potato salad. YES. The fried potato salad I inhaled at Etc brunch shows up in the tenderloin dish on the Etch lunch menu! So for that reason alone you need to get yourself there pronto.
Chocolate, Malt, and Toffee Slice at Etch
salty chocolate crust, biscuit crunch, dark chocolate mousse, malted milk cream, cocoa nib-toffee crumble, malted caramel sauce

Wow. That fried potato salad looks incredible. That and the quiche are definitely making me drool right now! I’ve been wanting to try etc, so that’s my pick – although I’d be moe than happy with either one : )
Still haven’t tried etch! I’d love to grab the fried potato salad and brunch sounds amazing!!
The steak at Etch is the best I have ever had and I would love to try it again, but Etc looks absolutely incredible as well (fried potato salad?!). We actually tried to get Valentine’s weekend reservations at both places to no avail! Would love a chance to go!
I’ve never been to either restaurant and I have a sweet tooth so I definitely would have to try some of the desserts!
Oh girl, you gotta try them both soon!!!
I have been DYING to try the Chocolate, Malt, and Toffee Slice at Etch!! I look at photos tagged on Instagram of it all the time!
I’ve been to Etch for dinner and would LOVE to go again, but I think I need to give ETC a try!!
that dessert is HEAVEN! You must get there and try it before they change the dessert menu! (of course, pretty much every dessert I’ve had there is heaven, so ….)
Just tweeted :) :) (with a gif too!)
While celebrity chefs and their brands continue to poach on Nashville’s new found fame as an “it” city, Deb Paquette long ago proved herself to be the real hometown star. And don’t get me started on Chef Megan Williams. Sometimes I’ll just stop in at Etch for dessert. It is that good. With Etch, and now Etc., Chef Paquette continues to raise the bar and challenge diners to expand their palates. I’d love to try her brunch at Etc.
Absolutely! Well said. They are both gems :-)
I love the cauliflower at Etch more than life! But I also want to try the Tenderloin! Must try the potato salad STAT. I’d be thrilled to dine again at either restaurant!
Ummm…I want tot try everything! I would be thrilled to go to either. Etch is amazing but I NEED to try Etc. I, like you am not a big potato salad fan, so I must try the fried potato salad so I can become a believer too!
YUM – I’ve actually (embarrassingly) never been to Etch or Etc and would love to try either. The Shitake & Gouda Grilled Cheese has also looked amazing at Etch, and I’d say I’d have to try the Nashville hot chicken benny at Etc.
Always and forever, I am craving the cauliflower!
I’ll absolutely be trying the cauliflower, the Argentinian beef looks outstanding, but I’ve also got my eye on the Turkish fish tacos. I’ll be visiting Nashville soon with my sister and we’d put an Etch gift card to great use! (p.s. I’ve also followed and tweeted your giveaway!)
I have been to Etch a few times and dinner at Etc. I’m with you – Love love love……………… I would like to try brunch at Etc. – I would love to try the Shakshuka, it looks amazing!!! (I already follow you on Twitter and tweeted the giveaway). Thanks! :)
You sold me on the fried potato salad…so interesting…how am I craving something I’ve never had?!? I went to Etc for lunch the first day they were open but would love to try it again as I’m sure there are new/different items on their menu now. Also want to try the thing I can’t pronounce :) After not being able to have undercooked eggs or soft cheeses (pregnancy) I’m ready to make up for missed time!
Oh gosh, how do I pick between the two? I love Etch’s cauliflower but I’ve been to etc. twice in the past few weeks and love the shrimp salad! I would love to try something different at etc. :)
I love potato salad, so you have sold me on trying the fried version. That said, I would prefer Etc., but Etch would also do.
Well the fried potato salad, for sure! But I love shakshuka, so I’m dying to try that too!

I’ve been wanting to try Ect. And you’ve sold me in the potato salad – like you have never been a fan of traditional potato salad so I’m intrigued! Thanks!
I have been wanted to try both Etch and Etc for some time now! Ever since I heard about that roasted calif lower, I know I has to go! I’d lobe to get the gift certificate there!
I follow on Twitter and I tweeted! @catjack96
I followed you on twitter and tweeted too! I’d love to try Etc. and loved the roasted cauliflower when I went to Etch! Anyone that can make me like cauliflower has to be an AWESOME chef!
I want to try the Southern Belly at Etc. It sounds amazing!
Oh my goodness. That pear crumble tart at etc looks heavenly! Would love a gift card for there or etch! I’m going to Nashville soon for my bachelorette party and would love to have this to share with my girls :)

That potato salad at etc looks incredible! I would be more than happy to try etc. for the first time or go back to Etch for an A+ dinner.
??????
The Pear Crumble Tart at Etc. and the Chocolate, Malt and Toffee Slice at Etch both look like amazing desserts. I would love to go to either restaurant!

Fried Potato Salad has all my favorite food groups; loved Zola, love Etch and have yet to try Etc!!
I would love to have dinner at Etch. My dream dining experience would be mussels for staters, Etch Salad and Lamb Duo with Crispy Potato Salad. The icing on the cake would be the Pecan and Brown Butter Cake. Debi Paquette amazes everyone with exquisite pairings, food design, restaurant concepts and surprising fresh and eclectic preparations that look as good as they taste. Too, once a native of Kingston Springs and now a resident of Tampa, this would make my homecoming the best. Pretty please select me.

ETC is in my neighborhood and I’ve been dying to try it! I love Etch!! I’d order the Peruvian Quiche and Fried Potato Salad! I haven’t seen too many places in Nashville with quiche on the menu. I definitely want to try their Bloody Mary’s too!
I tweeted, too! :)
Everything looks so good! So I will be very happy to have either one!
The Argentinian Tenderloin with green salsa definitely call my name. Nothing like some latino flavors on a dish?
Love Quiches so I’m sure I will love the Peruvian one! But everything looks fantastic.
Beautiful pictures!
I just tweeted! @LesleyEspinosa
Fried Potato Salad at Etc., of course. I adore Potato Salad in all it forms, so I know that I am going to love this! My mouth is already watering. BTW, since your Blog turned us onto to Mayo in Sonoma (we’ve been there about five times) years ago, I wanted to ask if you had done the wine/food pairing at B Cellars on the Oakville Cross Road? If not, you absolutely must try it the next time you go to the Wine Country. It’s hands-down, bar none, the most spectacular pairing anywhere there! You will be soooo glad that you went. Now, onto Nashville’s Etc.!!!
It sounds like I need to get there for the cauliflower!! Would love to go to either !!!
I have been wanting to check out both of these restaurants for a while but haven’t had a chance yet! I’ve heard great things about both places, but after looking over the menus, I am most excited to try the Turkish Fish Tacos at Etch. They sound absolutely divine, although I might be biased because I’m Turkish ;-) I’d be very happy to win a gift certificate to either restaurant, but maybe Etch has a slight lead!
I tweeted about the giveaway! Link: https://twitter.com/AyeAyeOnTheRun/status/830944551191838720
Would love to try the fried potato salad and the Peruvian quiche. I would love to win a gift certificate to either one but already have been to Etch and now I need to try Etc.
I work next door to Etch but live down the block from Etc, so both are close to my heart! There is nothing better than Etc happy hour after work with scallop crudo… so delicious! But I haven’t tried brunch yet so that will definitely be my next goal!!
The Beet salad at Etc… so delicious
Well, you have me sold on that fried potato salad!
Etc is so close to where I live so I would love a gift card there! I can’t wait to try the fried potato salad you mentioned. It looks Amazing!
Followed and tweeted :)
They both sound amazing! I love quiche so I would definitely want to try that. Everything sounds awesome though especially that pear crumble.
I would love to try that potato salad! Yum! I absolutely love the cauliflower at Etch but that’s all I have had there. So, I would be thrilled to try either place!

I eat out a good bit for work, but I really think of brunch as the perfect time for a date with my husband. I’ve tried to get to Etc. twice for brunch with him – first time, one kid went down with the stomach bug. Second time the sitter got in an accident and we had to cancel. I’m dying to try to Shaksuka (especially after I watched you cut that perfect yolk in you IG Stories), and I would absolutely have to save room for the chocolate peanut butter panna cotta. Pretty sure I’d have a vodka cocktail or two as well!
