Vegetarian Dinner at Fido
With so much produce at peak season right now, it’s fairly easy for me to subsist on a diet of mostly vegetables and fruits. Tomatoes, beans, squash, potatoes, cucumbers, peppers, okra, peaches, blueberries, and cantaloupe are just a few of the items I’ve gotten from friends’ and family’s gardens and the farmers’ market this week. New recipes await me, so I’ll be sharing those with you soon, but today I’ve got something different.
For Meatless Monday this week, I’m pointing you to a vegetarian dinner taking place next Wednesday! Guest Chef Russell Johnson of Grins will be cooking up a delicious meal at Fido, and for any of you that might be hesitant to go meatless, I think this would be a great opportunity to see that you really don’t have to sacrifice flavor or satiety by doing so. Feast your eyes on this menu:
Bonnie Blue Farm Goat Cheese Flan
watermelon, mint, pine nuts, balsamico, extra virgin olive oil
paired with Gunn Estate Sauvignon Blanc, Marlborough, New Zealand
Cornmeal-Battered Okra & Vidalia Onion Fritters
heirloom tomato, green goddess, sumac
paired with Broadside Chardonnay, Paso Robles, California
Summer Vegetable Stew
tomato, shell beans, sweet onion, bell peppers, eggplant,
summer squash, grilled country bread, basil oil
paired with Pali ‘Riviera’ Pinot Noir, Sonoma Coast, California
Fresh Peach Tart
pedro jimenez whipped cream
paired with Valamasca Moscato, Piedmont, Italy
