The Glory of Cheese

I have a new friend. Her name is Kathleen and she makes cheese. Really good cheese. And tomorrow she will introduce her cheese to the world. Okay, maybe not the world, but at least all of the shoppers at the Nashville Farmers’ Market!

Kathleen will be serving up samples of her creamy ricotta bright and early Saturday morning at the market, so I’m telling you now- you better get there before it’s all gone! In addition to plain ricotta, she’ll be selling some flavored ricotta that I personally endorse:

Fresh Basil & Roasted Garlic Ricotta
Peach Ricotta
Chocolate Ricotta

For dinner last night I used the Fresh Basil & Roasted Garlic on a Fried Green Tomato Stack topped with balsamic tomato coulis. Oh ga. Delish.

If the only ricotta you’ve ever tasted is the mass produced kind from a big chain grocery and never had the pleasure of experiencing fresh homemade ricotta, you really don’t know what you’re missing. This is nothing like that grainy glop in the stores. One spoon of that stuff is enough to make me gag. Not this- completely the opposite- I can eat this creamy goodness by the spoonful straight from the container!

Case in point, my dessert: Chocolate Ricotta and Strawberries. Cool, light, and airy- a perfect way to end a meal on a hot summer night.
