Heirloom Tomatoes with Fresh Peach, Goat Cheese, and Pecans

 

Summer on a plate. That’s the best way to describe this salad.

Not only is it gorgeous, it’s absolutely delicious. Using juicy heirloom tomatoes and peaches from the farmers’ market, local goat cheese and basil from my own back yard, I was able to create this beautiful side dish in only a matter of minutes.

While this would be absolutely perfect to feed a group for a dinner party or even a brunch, two very hungry people might not have much trouble finishing it off either.  (At least that’s what happened in our house….over the course of two meals, my husband and I gobbled it up!)

 

Heirloom Tomatoes with Peach, Goat Cheese, and Pecans

Serves 6. From Southern Living.


Ingredients:

1/3 cup white balsamic vinegar

1 garlic clove, minced

2 Tbsp brown sugar

2 Tbsp olive oil

1/8 tsp salt

1 large peach, peeled and diced

2 Tbsp chopped fresh basil

2 lbs heirloom tomatoes, sliced

3 oz goat cheese

1/2 cup chopped pecans, toasted


Directions:

Whisk together white balsamic, garlic, brown sugar, olive oil and salt. Stir in peach and basil. Spoon over sliced heirloom tomaotes; top with crumbled goat cheese and toasted pecans. Sprinkle with freshly ground pepper to taste.
