Cauliflower Crust Pizza

A co-worker of mine is currently on a special diet and has been experimenting with several low-carb dishes. One day a few weeks ago, she dropped by my office to tell me about a recipe she’d found – pizza crust made of cauliflower! Yes, it sounded a little strange, but I was definitely intrigued. Since she’s a culinary school graduate and enjoys food as much I do, I trust her judgement and wanted to try it.
She offered to bring a piece to the office the next day for me to sample and even day-old and reheated, it was really good!
My husband is a pizza fanatic, so this new discovery was particularly exciting. Since I try to limit the processed stuff we eat, cutting out simple carbs from our meals when possible, I don’t like to make or order pizza very often. I personally love the sauce, cheese and all the toppings that come on pizzas, but I don’t like the way I feel after eating all the dough that serves as the delivery vehicle, so this twist on the crust has made us both very happy.
With a hefty dose of veggies, I feel good about eating it myself and feeding it to him, which means he can get his pizza fix a lot more often now. We pile it high with a variety of toppings- mushrooms, spinach, red peppers, green peppers, onions, green and black olives, sometimes with meat, and sometimes without.
I’m not going to lie and say it’s just like eating a flour pizza crust because it’s not. But surprisingly, it’s not like eating cauliflower either. I’m not even sure that you’d be able to guess what it was made of if someone hadn’t already told you. The one problem I find is that while it’s not impossible to pick up a piece and eat with your hands, it’s much easier to use a fork. We feel that’s a small price to pay though in order to feel better about what we’re eating.

Cauliflower Crust Pizza
Serves 2; Adapted from Your Lighter Side.
Ingredients:
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings*
Directions:
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some microwaves are more powerful than others, so you may need to reduce this cooking time). There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).
Enjoy!
*Note that toppings need to be precooked since you are only broiling for a few minutes.
Note for those that don’ t have a microwave:
You can steam the florets on the stove before ricing them. The texture/consistency won’t be the same (It will be more like a puree) but it still works fine once you mix all the ingredients together! I know because I’ve tried it that way too!




I love this recipe! I add about a tablespoon of flax-seed to the crust (I realize that this is a carb but it also adds some fiber to the mix which is never a bad thing). I made this recipe last week for the girls and we all loved it. I used an organic pizza sauce, goat cheese, portabella mushrooms, and asparagus. It was truly amazing!
Made this last night for dinner. Good thing one head of cauliflower makes 3C cooked, as I wasted a cup trying to get the crust perfected. NOTE: Wax paper will not work in place of greased pan or parchment – the crust will stick to it like glue!
Ok, 2nd try cooking it directly on a pizza pan sprayed with cooking spray and it turned out great. Still a little soft in the center, but not soggy. I topped mine with mushrooms, broccoli, artichoke hearts and olives over a marinara sauce and low-fat mozzarella cheese.
The next time I make this, I am going to make smaller personal size pizzas in hopes of getting the entire crust crispier. Thank you for a great recipe – my husband & I both loved it!
Just made this tonight & looooved it! My hubby who is not the type to eat this liked it a lot too. I am the dummy who left out the mozz cheese. Fortunately it still turned out great & less cals. Thanks for sharing!

i was able to pick my pieces up, no issues, i doubled the cauliflower as some commenters noted, since it shrunk pretty good in the microwave.
i also used monteray jack cheese instead of mozza since that’s what i had
was awesome.

I made this for my husband and myself this evening (found your site on pinterest) and he LOVED it. I too did not tell him what was in the crust until he ate it and he was just disappointed there was not more. I made it into a meat lovers but used turkey pepperoni, sweet ham (thick), and sausage. Thank you for the great meal with not as much calories!
My daughter is trying not to eat meat…She saw this recipe and tried it. She called me and said she will never eat pizza with regular crust again. She LOVED IT!!!

I couldn’t wait to try this recipe but have to admit that I was a little nervous it wouldn’t taste as good as regular pizza. We made it last night and I still can’t believe how amazing it was!! Not only did it taste as good, even better than regular pizza, you didn’t feel so heavy/greasy after eating as well. I cannot wait to make this again :)
I was so excited to find this recipe as well. My mom and I try to eat as little dairy as possible so we put vegan cheese in it as a substitute for the cheese in the crust and on top of the pizza as well.
For some reason, the crust did not get hard and we ended up having to eat the pizza with a fork.
Do you think it was because of the vegan cheese or what?
The pizza was still fantastic, although i won’t put garlic salt in it next time because it was way to salty, but i would love if someone knew the answer as to why our crust was still soggy after cooking it.

can this crust be made without the mozzarella? I don’t care for cheese but I eat pizza all the time without cheese, I just use fresh toppings

I finally tried this tonight, something I could eat during passover! I burnt the crust a little bit (probably just need to get used to my oven) and it was soft in the middle but it tasted seriously delicious!!! Just used cheese and caramelized onions…and I can’t wait to make it again and tell my mom about it! Thanks for the recipe!

I made this recipe last night! It tasted AMAZING! However the 75% of the crust was soggy even before I put the toppings on. Did you notice that? I tried letting it cool to see if it would set and it never really did. Im not looking for a crispy crust but I figured it would at least set — and I followed the directions to a T. I made a second on and flipped it over and browned the other side to see if that would help and not so much. Any suggestions??
Wonder if you use a pizza stone if the middle wouldn’t be soggy? Have you tried that or heard of anyone who has? I can’t wait to try this recipe. Found it on Pinterest and now following your blog! Thanks for the great recipes! :)
Or maybe even cook it on the stove like an omelet (and flip) and then put the toppings on?

I’ve made your original recipe a couple of times and loved it, but got to thinking…..veggies are best for us when they are raw, so I tried the recipe without microwaving the cauliflower. Couldn’t tell a bit of difference!! (It may have stuck to the pan a little more but parchment paper fixed that.) Thank you so much for make pizza a little less guilt-inducing!

I have been on a low carb diet since last July and found the cauliflower pizza crust recipe just googling it after i had heard about it. I didn’t read ALL the posts here but one of the last ones was from last year and said they couldn’t have mozzarella cheese..you suggested provolone or monterey jack which sounds good. But one of the recipes i also found online used cream cheese and it’s excellent also!
I also make my pizzas on a cookie sheet using the parchment paper so doubling it works great when we want to have leftovers for another night of pizza!
I love cheese… but woah there was way too much. And for those who are on “carb-free diets”…. the amount of cheese you’re eating in the crust alone is not health friendly….. I cut the cheese in half the 2nd time around and patted the crust real thin. Works exactly the same!

hey!! i was so excited with this recipe! I try it twice.. the first time i forgot the baking spray! ok.. you can guess now the result.. the second time i use it and the result was the same!! this thing is delicious but you can not remove the pizza from the cookie sheet! i used wax paper plus baking non stick spray..
HELP PLEASE!!! i really want to cook it again!

Thank you for this recipe! We recently cut out grains and have been missing pizza. This WAY exceeded our expectations! Our 4 year old was totally fooled and had no idea it was cauliflower. Now THAT’S the true test.

Made this tonight!! Amazing flavor, but my center stuck to my pan therefore had to be eaten with fork. Not enough cooking spray? Or I soread it too thin perhaps?? Any thoughts??
This recipe looked really good and very healthy too! i just finished making [and eating it lol] and i don’t know if I’m doing something wrong, but the crust was a little burnt around the edges and soggy in the middle. I could also definitely taste the cauliflower. Would love any suggestions on how to fix this. Thanks!
This was really good only made it with cheese for the first time. I will make it again. everyone loved it even family members that I thought would not. Taking it to a meeting tonight and was wondering on a calorie break down. I guess I will try to do it on my own. Oh I used parchmentment paper. Very easy to remove.

I just made this pizza crust and it is so so good!
I have a question though, my crust wasnt very firm it was pretty soft. How could I make it a bit firmer?
Also, in the directions you say mix 1 cup of cauliflower, egs and mozza.
is that one cup of each, or 1 cup combined?
