Nat’l Peanut Butter Lover’s Day
There is new love in my life, and since tomorrow is National Peanut Butter Lover’s Day, I decided I should publicly profess it. With great pleasure, I introduce to you the Peanut Butter Oatmeal Sandwich Cookie from Cocoa and Fig.
A few weeks ago when I was at dinner with some business associates in Minneapolis, they extolled the deliciousness of the cake lollipops at Cocoa & Fig, a little shop that I just so happened to have walked right past a few hours before. On my journey to catch the train to the airport the next day, I passed by once again, so my boss and I decided to stop and see for ourselves what all the fuss was about.
While the cake pops were mighty fine, they paled in comparison to this cookie.
Forget the Girl Scouts, this is the Rated X version of a Do-Si-Do. Buttery, chewy, moist and salty all at once, they leave me wondering how something so heavenly can feel so very sinful!
Being the thoughtful guy he is, my boss showed up at the office on Friday with an entire bag of these he’d picked up on his latest trip. Yes, I did share with some of my co-workers, but believe me, it was extremely difficult!

Now National Peanut Butter Day sounds like a holiday that I need to celebrate! Great cookie picture. I love eating cookies “out”. It’s the only way I can get away with only eating one or two!
Yum! I would have to sneak and one eat for breakfast! I am currently addicted to Trader Joe’s peanut butter cream cheese. Just found it last week and already had to go get another this weekend.

As you already know, I eat natural peanut butter. The great thing about natural peanut butter is there are SO many varieties! They all seem to have different flavors & textures. My favorites include Harris Teeter’s brand, occasionally the Kroger brand (with the yellow/gold lid) if I want something easier to spread, sometimes I get fresh ground, and I also REALLY love TJ’s brand of Valencia peanut butter with flax seeds in it. YUM!! I never buy the same brand twice in a row.
I love that TJ Valencia with flax seeds too. Haven’t had it in a while, so might need to pick up some of it at the same time I’m getting the pb cream cheese that Traci clued me in on!

I used crunchy peanut butter in the cream cheese and decided to make my own cookie dough for the crust (also using crunchy peanut butter). They are very easy to make gluten free if you decide to make your own dough for the crust!

These look outstanding and I would love their recipe. It looks very shortbread and salty just like I like it. As far as peanut butter goes, what I remember as decadent from childhood…peanut butter and marshmallow fluff sandwiches. Only way to improve is to slip a banana in between, but that isn’t totally necessary to enjoy this combo.
Ah, you and me both! I’m going to at least attempt to create something somewhat close to it. They’re so amazing that I’m sure it will take me a while to get it even close to right!
I’m not terribly picky, but I loved those big reese peanut butter cups with peanuts….the big single ones to a package? You can’t find the ones with peanuts anymore.
Something else I always wanted to try….you know how one of those peanut butter brands have those commercials where it looks like whole peanuts on bread, but they spread with a knife and it’s their peanut butter? I always wanted to lay a bed of whole peanuts down on a slice of bread, top it with peanut butter and chase it with a big glass of milk!
