I’ve attended a few of these free Williams-Sonoma techniques classes in the past, and they’re  quite informative and enjoyable. If all goes as planned, I’ll be at this weekend’s class brushing up on the basics of Indian cuisine. They’ll be covering the regional differences, essential spices, must-haves for Indian cooking and wines to serve with spicy foods.
