Oh Me, Grilled Brie!
Want to impress your friends at a 4th of July cookout this weekend? I’ve got just the thing for you.
On one of my recent lunch jaunts to the Whole Foods salad bar, I happened upon a sampling of this little bit of bliss- warm brie on french bread topped with cranberries, apricots, pistachios, and honey. My eyes rolled back in my head at the taste of it, so I promptly purchased all the fixin’s. Knowing that I would single-handedly devour the whole thing in one sitting if I made it at home, I held out a few days and instead took it over to our friends’ house so all the sin would not be my own.
Grilled Brie with Cranberries, Apricots, Pistachios and Honey Drizzle
Adapted from Fire & Flavor.
Ingredients:
1- 8 oz brie round
1/4 cup dried cranberries
1/4 cup chopped dried apricots
1/8 cup shelled pistachios (optional)
Honey (1 tsp to 1 Tbsp- your preference)
1- 6"x6" Fire & Flavor Maple Plank*, soaked**
Fresh French bread for serving
Directions:
Heat grill 350° F, place soaked plank on grill, close lid and heat for 3 minutes. Flip plank and place brie wheel on heated side of plank, close lid and cook for 10 minutes or until smoky and soft.
Sprinkle fruit and nuts over smoked brie. Drizzle with honey and serve with fresh bread.
*can be purchased at Whole Foods
**this particular board’s instructions had me submerge it in water for 1 hour. If you purchase a different brand, you’ll need to follow its instructions.
Yum..it seems anything I put on top of brie is so yummy.. this however is causing me to drive to Whole Foods this evening…Thanks.. Figtreeapps
That looks REALLY good. And it seems a little bit healthier than baked brie wrapped in puff pastry!
