Local Bits and Bites
Remember that Slow Food Bake Sale this past weekend at the Nashville Farmers’ Market? Well, this is what I picked up:
Made with: local zucchini, eggs, beets, carrots, apples, honey, flour, baking powder, baking soda, salt, and cinnamon
Since reading Carrington Fox’s recent review of Fido and Bites blog post about their Pink Radio Cake, I’ve been meaning to get over there to check out some of their new offerings. Unfortunately that hasn’t happened yet, so when I spotted this at the sale, I had to have it. Hubby loves carrot cake, and it looked like a carrot cake, so I knew he’d be pretty happy if I walked in the door with this big mama. (a bit more exciting for him than my other purchases: eggplant, peppers, onions, and mushrooms)
Afraid that the beet thing might scare him a bit, I was a little hesitant to disclose the other ingredients that comprised this delightfully rich confection before he tasted it. Apparently he deserves more credit than that because once I did tell him, he dug right in anyway, and hasn’t stopped eating it since (and neither have I for that matter). Who knew beets in cake could taste so good?

My experience with men is, only tell them what they need to know! ;)
I'll chime in and say that cake was AMAZING! It totally reminded me of a loaf of my grandma's moist zucchini bread, only better! (Shhh.. don't tell her I said that.) Thanks for sharing!
