Green Chile Cheeseburger Casserole and a Turnip Truck Giveway
The days of me spending hours in the kitchen are over. Well, at least for the time being. As a full-time working mother of an infant, I’m sometimes lucky if I even have time to eat some cheese and crackers before 9 p.m. Cooking a big meal? Not gonna happen.
Looking back on my own childhood experience, I’m now completely amazed that my own mother had a hot meal on the table every night of the week, usually by 6 p.m. She didn’t even get off work until 5 p.m. for goodness sakes! We never ate fast food or takeout because those weren’t really options in my small town. Every single night she cooked. And it was good. I’m dumbfounded.
I keep telling myself that once he’s sitting up, or walking, or feeding himself — you know, any stage that doesn’t require constant hands-on attention– then I’ll be able to go back to how it used to be. But for now, I make do. What that means is that takeout has become the norm, and hot bars have been my salvation.
More times than I can count, I’ve visited the hot bar at The Turnip Truck in the Gulch to grab a nourishing meal. I was first turned on to The Turnip Truck hot bar by friends extolling Fried Chicken Wednesday. At some point, I decided I should see for myself what all the fuss was about. What I discovered was a smorgasbord of interesting selections on both the hot and cold bars. I was hooked.
Since it’s opening in October 2010, the Gulch location has featured a daily, freshly prepared hot and cold bar in addition to a variety of local and organic groceries. Each day there is a theme to the hot bar, but the dishes are ever-changing. On Monday, there’s Potluck; Tuesday – Italian; Wednesday – Southern; Thursday – Asian; and on Friday – Mexican.
And guess what? This Friday, May 25th, you can find a recipe of mine featured on the Mexican-themed hot bar!
When trying to decide what type of dish would work well, I started thinking about some of those dinners that my mom made when I was a kid. There was one in particular that was served often and a favorite of family members, no matter what age. We simply called it Hamburger Casserole.
I’ve put my own little spin on it, but it’s still very reminiscent of that homey, comforting meal my mom used to serve. Quick and easy, this is exactly the kind of dish that will probably pop up often on our dinner table alongside a crunchy green salad now that I have a child of my own. Hopefully my son will one day wonder how in the world his mommy was able to work meal-time miracles, just as I wonder about my mom now.
Green Chile Cheeseburger Casserole

1/2 cup uncooked rice
1/2 medium onion, chopped

1/4 tsp black pepper
1/2 tsp salt
3/4 cup shredded cheddar cheese

Over medium-high heat, brown rice, beef, and onion in oven proof skillet. Drain fat. Add water, tomato sauce, green chiles, salt and pepper. Mix well and bring to boil. Cover and simmer 20 minutes. Stir and top with cheese.

Ha! Well, don’t feel bad. My husband didn’t know it was there either until I started writing this post!
I’ve been to the Turnip Truck in the gulch a few times. Its super nice and the people are really helpful. I didn’t realize that there was a hot/cold bar so I might need to make a trip there soon. :)
I just moved to Nashville and have heard great things about the Turnip Truck. I haven’t been there yet, but if I won, I’d use the money to buy some of those beautiful veggies in your picture!

I’m now a facebook fan!
Love that they have the pecan smoked trout that I grew up on! It’s smoked over the pecan shells from my family’s pecan shelling plant in Georgia! With caviar and cream cheese on a cracker, it’s heaven….
Never heard of that specialty, but I must try!
I love the Turnip Truck’s bulk section! I’ve never had the hot bar but it always smells amazing!
Oh yeah, I “liked” their page, too….Didn’t know they had one….Thanks for the heads up!
Hi Beth! I love this post! I am a HUGE fan of TT! I go about 3 times a week for lunch….the best thing!? Its a toss up…I am in love with the Vegan Hummus Wrap but the homemade tuna salad on pumpernickel is super yummy and I never ever leave without getting a Ninja Turtle Juice drink! Yummo!!! Oh wait-their ginger carrot soup is great in the winter time. Clearly, I cannot pick just one thing!
wow. You’ve given me a list of things to try!
I haven’t shopped or eaten at The Turnip Truck, but every time I drive by I want to stop in. If I won, I’d probably check out their hot bar and stock up on some great organic produce or staple items.

I’ve only been to the new Turnip Truck once, though I loved it! I shop at the East Nashville location constantly, primarily for produce, granola in bulk, Applegate Farm’s Sunday bacon, Kenny’s cheese and Noble Springs’ chevre.

My favorite is the Chicken salad….. Cant get enough….. Have been shopping at the Gulch since it opened, changed my life. Since eating organic I feel better & have lost 20lbs. which is allot since I’m a whole milk drinker 1 1/2 gal a week.
Also love that I found Your website & fb.
Also been a fb fan of them since the beginning….. But liked Your also
I actually tried out the Turnip Truck a few weeks ago for their healthy meal planning on a budget class. My favorite part was the hot bar and the bulk food section! I love that I can get as much as I need and they have a unique selection so I can try new grains.
I love the Turnip Truck! The best part is the hot bar. They also do a great job at curating products. I do the majority of my grocery shopping there and that’s saying a lot because I work for Trader Joe’s!
I have been to Turnip truck before and I love the place. Last time I bought dried fruits and bulk nuts.
