Curry Chicken Casserole and Meal Train Thanks

 

 

As I mentioned in previous posts, I was blessed to have a wonderful support group surrounding me after the birth of my baby boy. For almost the entire month of February, a steady stream of friends delivered meals to our door. Some were homemade, some were take-out. That part didn’t matter, because they were all wonderful!

As we adjusted to having a newborn in the house, it was such a huge relief to not have to worry about preparing or cooking meals, and for that I want to send out a HUGE thank you to all of those that participated in our Meal Train. My friend Jen’s curry chicken casserole was so yummy that I just had to ask her for the recipe, and I’ve in turn shared it here with you today. Enjoy!

Curry Chicken Casserole

Serves 6-8


Ingredients:

1 pound chicken, cooked & diced

1 box Uncle Ben's long grain & wild rice

1 can cream of chicken soup

8 oz sour cream

salt & pepper

1 tsp curry powder

1 1/2 cups panko

1/4 cup melted butter

1-2 Tbsp poppyseeds


Directions:

Grease casserole dish.


Cook rice as directed and spread on bottom of pan.


Combine chicken, soup, sour cream, salt, pepper & curry and layer mixture on top of rice.


Mix panko with butter and top chicken mixture. Sprinkle poppyseeds on top and bake at 375 for 30 minutes or until bubbly.
