As I mentioned in previous posts, I was blessed to have a wonderful support group surrounding me after the birth of my baby boy. For almost the entire month of February, a steady stream of friends delivered meals to our door. Some were homemade, some were take-out. That part didn’t matter, because they were all wonderful!

As we adjusted to having a newborn in the house, it was such a huge relief to not have to worry about preparing or cooking meals, and for that I want to send out a HUGE thank you to all of those that participated in our Meal Train. Below I’ve included a list, along with links to their blogs and, if possible, even the specific recipes for the dishes they shared with us.

My friend Jen’s curry chicken casserole was so yummy that I just had to ask her for the recipe, and I’ve in turn shared it here with you today. Enjoy!


Curry Chicken Casserole

Serves 6-8


1 pound chicken, cooked & diced
1 box Uncle Ben's long grain & wild rice
1 can cream of chicken soup
8 oz sour cream
salt & pepper
1 tsp curry powder
1 1/2 cups panko
1/4 cup melted butter
1-2 Tbsp poppyseeds


Grease casserole dish.

Cook rice as directed and spread on bottom of pan.

Combine chicken, soup, sour cream, salt, pepper & curry and layer mixture on top of rice.

Mix panko with butter and top chicken mixture. Sprinkle poppyseeds on top and bake at 375 for 30 minutes or until bubbly.

    This curry chicken salad sounds like something Nathan would really like. He’s a big fan of chicken + rice. Despite my silly insistence on vegetables. ;)

      I think it would be great with broccoli or some green veggie added into it too. That’s what I’m going to do when I make it!

    I never made you that second batch of muffins! But I have more oatmeal now. I will make them and try to squeeze in a visit before you start work again. Because you can ALWAYS use more muffins.

    Good idea to add a veggie, Beth. When I’m up to my eyeballs in CSA greens this spring I will try it! Glad you enjoyed and shared it, despite the cream of X soup ingredient ;-)

      A little cream of x every now and then is my guilty indulgence…I could never fully give up all those southern casseroles I grew up on!

    I’ve taken part in several meal trains and wish someone had done them for me, oh so many years ago. I do remember my mother in law coming by on our second or third day home with baby number two. She handed us foil wrapped packages each containing a hamburger, potatoes and carrots, hot from the oven and ready to eat. Love the idea. Thanks for sharing the recipe and links and introducing us to so many bloggers.

    Hi there! I’m a fan since trying the cauliflower crust pizza. I can’t stop making it and trying different toppings! Genuis! :)

    Anyway, this recipe looks good too, but what is panko? I’m Aussie :)

      Hi Hannah! Panko are Japanese bread crumbs. They are awesome! I use them on anything that calls for regular bread crumbs because they are much airier and crunchier.
