The newest cookbook gracing my kitchen shelf is Sheryl Crow & Chuck White’s, If It Makes You Healthy. I met Chuck, Sheryl’s personal chef, last fall when we both judged a local chili cook-off. We spoke about the production of the book that day, and then when it came out this spring, he offered to send me a copy. Naturally, I accepted!

Here are a just a few things I love about it:

  • emphasizes using seasonal, locally grown ingredients
  • many of the dishes are plant based, and so filling that even those of us non-vegetarians won’t miss the meat (the Quinoa Stuffed Poblano Peppers with Salsa Romesco are a great example)
  • all the recipes I’ve tried so far are both nutritious AND delicious!

When Sheryl was diagnosed with breast cancer in 2006, it was a wake-up call for her to eat better, thus, Chef Chuck came into her life. He has been working exclusively with her at home and on tour since then, teaching her how to use wholesome foods that promote maximum energy and health. I don’t know about you, but if eating like this can make me look like she does at 49, I’m all about it!

    This cookbook looks great!! My favorite healthy recipe is one you posted a while back: Quinoa Tabbouleh. I actually have to make double the recipe because everyone always goes back for more. It is so light and tasty- perfect for a summer day. Quinoa is a staple in my house, and is great to see new recipes using this wonderful little grain!

    Would LOVE to win this cookbook! Huge Sheryl fan. Two healthy go-to’s always in our house: Greek yogurt/fresh fruit/granola for breakfast and fill-in-the-blank fresh veggies from our Delvin Farms CSA + salad greens &/or quinoa and Noble Springs feta. Light fresh and delish!

    In the summer, sloppy joes are a must in my family. Chef Jamie Oliver revamped the recipe to make a healthier and lighter meal. They are especially delicious in a wrap instead of the old standby hamburger bun!

    Crab cakes! This is something I’ve been enjoying pretty regularly recently. I’ve always thought crab was way too expensive, but we found yummy lump crab in huge cans at Costco and have been making all sorts of yummy tasties with it. This is one of our favorites as a couple, and you can make it a meal or apps or sides or salads, very versatile

    It’s amazing how many good recipes are out there for healthier eating. I discovered this one when I was trying to cut calories and lose a few pounds. These Sweet Onion & Spinach burgers have since become a staple in my house, even when I don’t care about the calories!

    We have been trying to do more plant-based eating around here and one of my favorite books for simple Vegan recipes is The Kind Life by Alicia Silverstone.     I just treated myself to a Vitamix, so have been experimenting with it! Trying lots of “green” smoothies, etc. Who knew kale and broccoli could be fun to drink? I am also on the quinoa bandwagon and love a recipe from Cooking Light – Orange Quinoa Salad. I usually make extra dressing and top it with feta. So easy and perfect in the summer heat!

    My fave Healthy Living recipe is easy… it’s your morning or mid morning nourishment.
    Healthy Living Smoothie:
    1 1/2 cups fave milk alternative – coconut milk(my fave due to its low calorie(unsweetened) value & High Nutrition values.. you can also choose unsweetened almond milk or rice milk.
    1 handful of your fave fruits… my preference is strawberries & pineapples.
    1 TB of almond, cashew, or tahini butter (for protein)
    1 Tsp. coconut oil
    1 TB shredded organic coconut
    1 scoop of fave Greens Powder..( some choices are Greens Plus, Amazing Grass)
    4-5 ice cubes
    dash of ginger, nutmeg, cardamom, cayenne( yes, cayenne – it’s great for the heart)
    1 TSP agave
    1/2 tsp vanilla extract
    Blend together and voila… a great, great, nutritional pick me up or start the day meal in a glass!
    For variation I sometimes switch the fruits to mixed berries and add a 1/2 tsp of organic cocoa. YUMM!

    Because I grew cabbage this year, I’ve been obsessed with trying different vinaigrettes for cole slaw. I made asian-style that was wonderful with a peanut dressing. Healthy and fun for me to experiment. :)

    This is my favorite healthy slow cooker recipe – I still can’t believe how good it tastes with so little fat. The recipe calls for turkey, but I always use chicken, and I usually add a fresh jalapeno. Definitely don’t forget the lime and fresh cilantro at the end!     This recipe I found when I was growing corn in my garden and it is fab….
    Raw Corn and Radish Salad with Spicy Lime Dressing. This can be served along side anything off the grill, BBQ or Fish tacos. I also like it atop spring mix and add some shrimp creating a lovely lunch or light dinner. You can kick up the spice with more jalapenos.

    Try making fish tacos at home with scallops… either sauteed or lightly pan fried with a light dusting of panko for some crunch.

    One of my favorite healthy lunch recipes is grilled tomato/avocado sandwich- two pieces of whole wheat sprouted bread, one layer pineapple salsa, one layer fat free cottage cheese, top with tomato slices and avocado. Grilled and cut in half. Enjoy!

    We have 2 healthy faves right now – this Roasted Ratatouille with Honey Polenta http://www.rachaelray.com/recipe.php?recipe_id=3965 – I go light on the parm & use Olivio brand spread instead of butter.

    And then I’m kind of obsessed with the Bliss Bowl at Freshii so I’ve been making it at home (warm brown rice, roasted red pepper, chopped tomato, mushroom, light avocado, sprinkle of goat cheese, extra light olive oil & balsamic.) Seriously could eat that for every meal.
